This is a classic English Victoria sponge cake which is relatively easy to make and is a great choice for a light summer dessert.
This cake can be quite readily modified to make a lemon sponge by simply doubling the butter cream recipe and replacing the water with lemon juice. The top can then be iced as well and decorated with candied lemons.
Skibo Castle is located to the west of Dornoch in the Highland county of Sutherland, Scotland overlooking the Dornoch Firth. Although the castle dates back to the 12th century, the present structure is largely of the 19th century, and early 20th century, when it was the home of industrialist Andrew Carnegie. It is now operated as the Carnegie Club, a members-only hotel and country club.

The perfect scone recipe is hard to find. Many versions wind up heavy and doughy. Thanks to a previous owner of the Captain's House Inn, of English decent, we serve a traditional British version of this tea staple. It is just the right consistency to melt and crumble in your mouth, yet light enough to make room for all our other tea goodies!
Add any of your favorite ingredients like chocolate chips, raisins, cinnamon and apple, maple syrup and pecans, or our chef's favorite combination - white chocolate and lavender.
This dish is a perfect example of our chef's creativity in the kitchen. The flavors in this dish really work well and you can add your own special touches - kale, bacon - the possibilities are endless!
